Rhubarb Cookies
1/2 lb. butter, softened
1 cup brown sugar
1 egg

2 cups unbleached flour
1 tsp. bkg. soda
1 tsp. pumpkin pie spice (cinnamon ginger, nutmeg & allspice)
1/2 cup nuts (optional)

1 1/2 cup cooked rhubarb, drained (I cooked my frozen rhubarb in a bowl in the microwave and added 1 cup raisins, mixed, cooled & drained.)

Cream butter, sugar and add egg. Sift dry ingredients into mixture. Add nuts & rhubarb/raisins. Mix well. Drop by spoonfuls ( I use ice cream scoop).

Bake in 350 degree oven for 12 min (depending on size of cookie, larger ones will take more time).
Cool on rack.

About 15 years ago, my wife was trying to grow some plants under the birch trees in our back yard and the tree roots were so competitive that nothing would grow. I got this great idea that I would cut the tops out of some 55-gallon barrels and punch some holes in the bottoms and dig them into the flower bed and plant inside the barrels, thus excluding the tree roots. A few days and a few blisters later, I had six barrels buried in the backyard. I filled the barrels over half full of manure and then added a little soil on top, then planted rhubarb in three of the barrels and peonies in the other three. The rhubarb did great. The peonies didn’t die, but they never produced any flowers either. Last spring, I realized that the barrels were full of tree roots that had found their way up through the holes in the bottoms, so I dug up the barrels and tossed them. The interesting part was observing the plants as I dug them up.

The main crowns of the rhubarb plants were buried at least a foot deep in the barrels and the peony crowns were at least five inches deep. Evidently, the manure had rotted and settled over the years, and as I had rototilled around the barrels each year extra soil had sloughed over the sides and had buried the plants pretty deep. Since peony plants aren’t supposed to be planted more than one to one and a half inches deep, that explains why I didn’t get any flowers. The rhubarb was a different story.

I dug up the first barrel and dumped it out and finally extracted the rhubarb roots and washed them off with a hose (see attached photo). I really liked the rhubarb, so I decided to split up the roots and plant them out on my farm. As I started picking out the dead material from between the eyes or buds, I realized that the main crown was way down at the bottom of the ball and that each eye had grown up on a tall stalk (like a carrot) with a bud on top. I could snap off each stalk and it was just the right length to fit in a 2-gallon pot. I didn’t need very many plants, but it became a game. When I ran out of eyes to snap off of the main crown, I had 76 pots lined up along my driveway. I left the remaining root ball (about the size of a basketball) in the wheelbarrow in my front yard (I never pick up my tools after working). About two weeks later, it had been raining for about a week and when I came home from work I wondered “What is all that green stuff growing out there in that wheelbarrow”? I went out and found that the bottom root ball from that rhubarb plant was covered with little eyes and leaves popping out all over. I went inside and got a sharp hunting knife and decided that if I could get 24 more plants from that root ball, I would have 100 plants separated from one mother plant. Before I got done, I was putting pieces with as many as six eyes into each pot and still got my 100 pots. One died, so I only ended up with 99 plants. When I dug up my other plants, I wasn’t as meticulous with my plant propagation.

What did I learn? I believe that if there is ever a demand for rhubarb plants in Alaska, I will add a couple of inches of soil around my plants each year until they are about 8-inches deep. Those eyes growing up on carrot-like stems sure are easy to propagate.

Recently I was stopped by a fellow rhubarb producer and told that the rhubarb they had picked was not in the right condition for resale. The buyer needed to have both ends "sealed". In order to do this, pull the rhubarb from the plant (do not cut the stalk from the mother plant) then remove a portion only of the leaf. You may do this by breaking off the leaf and leaving about 3" of the lower portion of the leaf attached to the stalk. This allows the plant to stay as fresh as possible in storage. Attached is a news release from earlier in the summer announcing payments made for last year’s program. It also announced the dates for applying for this year’s payments. This Friday, September 9, is the last day we will accept applications. Applications must be postmarked by Friday. I have also attached application forms and information about signing up the Reimbursement Transportation Cost Payment Program for Geographically Disadvantaged Farmers and Ranchers (RTCP). It's time to begin thinking of pulling the last of your rhubarb and readying the plant for winter. There seems to be a debate whether to let the leaves die out and protect the plant or whether this invites pests. See Rhubarb Pests. I have heard both. I do notice that I had a few blotches on one section of some rhubarb plants that were planted in a particular area which was surrounded by grass. I think I will go ahead and cut the leaves back (although there is the debate that this opens the stalk up to diseases), however I think that is more likely in the summer when the pests are out. Then I will cover the plants with at least 2" of soil. It is time to "disturb" my older plants and begin splitting them up and transplanting them next spring in my new rows of rhubarb cultivation. Remember, if your stalks become soft and mush, DO NOT EAT THEM. At this point, the stalk is poisonous. It is the oxalic acid that is harmful. This is always in the rhubarb leaves so the rhubarb leaves must never be eaten or fed to animals. It is okay to compost them, however.

I really do hate it that my fresh rhubarb is coming to an end. I have frozen and canned it but there is nothing like fresh. Today I made a rhubarb apple nectarine gallette. Yep, nectarine-they were at a good price in the grocer. I used one pastry shell.

Put a mixture of rhubarb, green apple and nectarine in a bowl.
Add 2 tsp. cornstarch
1/2 firmly packed brown sugar
Dash of salt
Mix well
Place filling into center of pie crust. The Gillette should be placed on a cookie sheet that has a lip or place foil under the rack should the mixture boil over.

Fold the pastry edges partially over the filling. (You may brush with egg to create a more golden brown crust. I did not.) Bake at 375oF oven for 35 minutes or until golden brown. I then added 2 T of Grace Gay's (from the Highway's End Farmer's Market) delicious rasperry jelly over the exposed filling. As you can tell, I couldn't wait for it to cool before I tried a piece. Delicious and gorgeous.

8 year old Wesley and I picked some rhubarb from the Wessel plants we got from Palmer, we just could not resist. Wes chopped them up (4 cups) and chopped 2 peeled green apples (2 cups). Then we mixed 1 cup of brown sugar, 1/2 cup flour, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1 tsp pure vanilla to the rhubarb/apples. We placed this mixture into a pastry covered 9 X 9 pan. We topped the mixture off with 1 cup flour, 1/3 cup sugar and 5 T cold butter - mixed until a crumb-like mixture.

We baked this at 350 oF for one hour or until the mixture was lightly brown on top and on bottom of crust. Our glass pan required the temperature to be less than when using a tin pan.

Wikipedia cites such things as rhubarb cultivation, history, cooking, history and more. I find it pretty interesting. Alaska is lucky to have such a source of the "pie plant".

"Rhubarb is a group of plants that belong to the genus Rheum in the family Polygonaceae. They are herbaceous perennial plants growing from short, thick rhizomes. They have large leaves that are somewhat triangular-shaped with long fleshy petioles. They have small flowers grouped in large compound leafy greenish-white to rose-red inflorescences.

Although the leaves are toxic, various parts of the plants have medicinal and culinary uses. The traditional Chinese pharmacopeia features rhubarb (as a laxative).^[1] In culinary use, fresh raw stalks are crisp (similar to celery) with a strong tart taste; most commonly the plant's stalks are cooked and used in pies and other foods for their tart flavour. A number of varieties have been domesticated for human consumption, most of which are recognised as Rheum x hybridum by the Royal Horticultural Society.

Rhubarb is usually considered to be a vegetable; however, in the United States, a New York court decided in 1947 that since it was used in the United States as a fruit it was to be counted as a fruit for the purposes of regulations and duties. A side effect was a reduction in taxes paid.^[2]"

Stampeders were quick to discover that rhubarb literally grows like a weed in Skagway. Apples failed, for some reason, maybe because of the poor topsoil or constant wind. Rhubarb, however, flourishes.

Every evening I pick my remaining rhubarb and make rhubarb bits. I find that I have adjusted the recipe, I don't like the syrup that equal amounts of sugar and water make so I put in 2 cups of sugar and 3 cups of water. Bring to a boil, dissolve the sugar and place the rhubarb bits in, I also bring it back to just under a boil, turn the heat off and leave over night. The next morning I take the rhubarb out, reheat and reduce the syrup, replace the rhubarb bits, heat through and place in 2 pint canning jars (sterilized). I water bath these for 10 minutes and from what all I read, it should last 6 months. I have 10 gallons of frozen chopped rhubarb in the freezer to also use for events (thaw and use the juice and then the pulp).

The Alaskan Summer Beer you ask? Well, I had extra syrup juice from my last batch of rhubarb bits so I am chilling it over night and adding it to my Alaskan Summer tomorrow night for flavor. Just a bit, not to overwhelm the taste. Maybe I can get Geoff Larson to come up with a rhubarb flavored beer yet.

Rhubarb Cherry Jam

6 cups diced rhubarb
4 cups sugar
1 (21 oz.) can cherry pie filling
1 (6 oz.) pkg. cherry flavored gelatin

Place rhubarb in large bowl. Pour sugar on top, stir to coat. Cover bowl and refrigerate overnight.

Place rhubarb mix in a pot and cook over medium heat with until tender, stirring frequently. Stir in pie filling and gelatin, bring to a boil. Pour into a shallow pan and allow to cool in refrigerator. When jelly is cool, pack in jars. Can be refrigerated or frozen.

Prep 15 minute
Cook 30 minutes
Ready in 1 day

Yields 2 pints.

1/2 cup butter, softened
1 1/2 cup brown sugar, packed
1 egg
1 cup sour cream
1 tsp vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp salt
4 cups frozen rhubarb, cut into chunks

Topping
1/2 cup brown sugar, packed
1 T flour
1 tsp cinnamon
1 T butter, softened

Beat butter and sugar together until smooth. Add egg and mix well.
Stir in sour cream and vanilla.

In small bowl sift together flour, baking soda and salt, then add to mixture and mix until just blended.

stir in rhubarb.
Spread cake mixture into greased 9 X 13 pan.

Mix all topping ingredients in a small bowl and sprinkle over top of cake.

Bake at 350 of for 35-40 minutes.

Mix together:
1/2 cup melted butter
4-5 cups diced rhubarb
6 oz pkg raspberry jello (dry)
3/4 c sugar
1 1/2 - 2 cups mini marshmallows

spread in a 9 X 13 pan

Mix a french vanilla cake mix according to box directions and pour over rhubarb mixture.

Bake at 350o F for 45 minutes.

To serve, invert a piece of cake so the rhubarb mixture is on the top. Add a dollop of whipped cream. Garnish with raspberries.

I love soaker hoses for rhubarb. You can either put it under fiber cloth or plastic that surrounds your rhubarb or if you don't have cloth/plastic, just situate it around the plants and "wallah", 30 minutes a day and my plants smile back at me. No, really they do;)

Wesley Hollembaek assists in the gathering of the rhubarb plants for cutting, cleaning and freezing the bits for winter use. We tried a couple new varieties and are very happy with their progress. We call these the Wessel Rhubarb. Red but not a real red inside of the stalk. I took the candied rhubarb to the bbq for the 4th and the remaining syrup for the host.

Rhubarb Preservation projects is in response to the lack of effort nationwide to maintain the genetic basis of this minor but important crop. Over 2,000 years ago it was found in Western and North-western provinces of China and in the adjoining Tibetan territory, and was originally cultivated for its medicinal qualities. Since the 18th century, rhubarb was grown for eating. Rhubarb is often commonly mistaken to be a fruit but rhubarb is actually in the vegetable family. Rhubarb is rich in vitamin C and dietary fiber and initial tests have found that it can lower cholesterol.

I am so inspired by folks who take the time to think about what they eat. We had a group of individuals who enjoyed a day of sunshine and rhubarb talk at the Highway End's Market. I am, by no means, an expert about rhubarb but I've studied it for these last 3.5 years and share the information that is out there. Here were the topics we shared:

"Over half of the nation's rhubarb crops are grown in WA but even that is less than 900 acres total. Of the 2.6 million pounds of domestic rhubarb shipped each year, WA growers freeze 1.5 million # of it. In many areas of the nation, it is difficult to obtain the rhubarb at retail outlets. Its popularity is trumped nationally by okra, turnip greens and escarole.
While consumers will pay extra for some high quality produce, there are not many discriminating shoppers looking for rhubarb. ...the larger mega stores shop primarily on price and have become less reliant on domestic sources for many of their products. At one time, the US was a major supplier of both fresh and frozen rhubarb to Canada, which utilizes the plant in a process form for pies and pie fillings Rhubarb was typically purchased frozen in bulk during the growing season and stored year-round. Competition from under-priced foreign suppliers has now edged the US out of the Canadian market. With rhubarb still being imported into the US, most notably from Poland, some Alaskan rhubarb growers are considering offering their product locally, nationally and internationally to compete with foreign markets.
According to the Alaska Department of Health and Social Services, 3 out of ever 4 Alaskans eat less than the recommended 5 or more daily servings of fruits and vegetables. Solstice Advertising recommends that Alaska Grown explores ways to use rhubarb as a healthy option, and markets these advantages.
In the Solstice Advertising Survey when asked if Alaska Grown rhubarb were available in forms, how likely would you use it in your business? One response noted: If rhubarb sauce was in individual packets, then I would use it in my business." Rhubarb Growing Made Easy overview from the Cooperative Extension Service UAF handout HGA-01023 was gone over. This included the following:

RHUBARB SALSA
In heavy quart pan, cook
4 cups diced rhubarb (1/4 " pieces)
1/2 cup water
1/2 cup sugar
Cook over medium heat until rhubarb is tender, stirring occasionally .
Remove from heat, spread in a glass pan to cool.

Add

1/2 cup chopped green onion
3 Tbsp. diced jalapeno peppers,(canned or fresh with seeds.
3 Tbsp. fresh cilantro chopped fine
1/3 cup fresh lime juice
1/2 tsp cumin
1 1/2 cup chopped fresh strawberries.

mix together, refrigerate several hours or overnight. Serve with cinnamon chips.

Cinnamon Chips
1 Tablespoon sugar
1/4 tsp cinnamon
4 (7inch) flour or wheat tortillas

preheat oven to 400
spritz or brush with water sprinkle
cinnamon/sugar mixture over evenly
bake for 10 -12 minutes or until lightly brown.
remove from oven, cool completely on wire racks.

We ended the workshop by demonstrating how to make rhubarb juice by simply pressing out thawed rhubarb chunks into a bowl through a colander or sieve. Taking that juice and adding sugar, sugar substitute, your favorite juice or a flavored lemonade, raspberry, or fruit dry drink mixture. Add water to taste. It went over very well, down to the last drop.

Katie Behrens then demonstrated how to split a rhubarb plant up. It was a good day.

The humble vegetable is undergoing something of a Renaissance, with studies on its health benefits, export possibilities and plans for commercial production of rhubarb juice in the works. Candied Rhubarb bits: 2 cups of sugar, 2 cups of water--cook on stovetop until sugar dissolves, stirring frequently. Place finely chopped rhubarb into sugar mixture and turn off heat. Cool. Remove rhubarb and set aside. Reduce sugar water. Add rhubarb back to mixture, hot water bath in canning jars.

Leslie and I wondered if you again, took the rhubarb bits out and then dehydrated them (she has a dehydrator) and this would be a great snack. The liquid may be used in various ways, one of the favorites is for a party in champagne or white wine. Good on waffles too, we tried that one morning.

After pulling the rhubarb, it is easiest to cut the leaf and bottom part of the stem immediately while in the garden. Here is Wes demonstrating. Since rhubarb dehydrates so quickly, I like to chop and freeze it immediately if I am not going to use it right then. Wes and I filled up a Sam's Club bag, Quentin took it to the shop kitchen and cleaned, chopped and placed it in freezer bags for me.

Hey, I saw wonderful bunches of rhubarb for sale at our local IGA store for $.99 per lb. It was tied with the Alaska grown ties. Love it!

Some of my plants are at different stages this end of May. I have piled on 1.5 gallons of compost to each. I will do the same in the fall. Water, water, water. The smaller plants are the ones that were in 3" pots last year that I got and this will be their second year. I am experimenting with different locations around the house to see where they like it the best. I have 4 varieties at this point. It is best to get rhubarb straight from the mother plant to ensure identity and type of plant. You may grow from seed but getting it from a mother plant is ideal.

I did not plant these rhubarb far enough apart. Next year when I get another bed ready, I will take every other one and relocate them.

Thank you Kathleen Wessel Sanderson for the generous rhubarb plants. Scott and I stopped by Palmer and picked up some that were not going to be used. Wow! RED ones! They have the ruffled leaves, not heart shaped leaves and will find a spot at the 10 acres for later identification. Next year I will have a start from Leslie's heart shaped red ones that she got from Bruce Bush. Let's see, I have Victoria, Paragon, North Pole Triple X and now these. I am desperately trying to keep them separate and id'd.

Wes and I made a rhubarb/apple crumble. 2 granny smith apples, 2 cups of frozen rhubarb cut in 1" pieces (I found a hidden pack), 1 cup sugar, 1 t cinnamon, 1 T cornstarch, dash of salt. I like to microwave my apples a bit before baking, speeds the process. Crumble: butter, oatmeal, flour and sugar *brown or white. Crumble on top and bake 350oF until brown. Got it out of the house after 1 piece. Whew! New rhubarb will be ready next week! I swear it grows before my eyes.

Is this too cool or what? A friend brought this from Australia for us to enjoy. How about that? Simply place whole Wild Hibiscus Flower in the bottom of a champagne flute, pour in some syrup and fill up with bubbly. You can use white wine. You can eat the flower, it has a delicious raspberry and rhubarb flavour.

It takes about 500 rhubarb plants per acre at least 3' apart.
You get 10 oz. of rhubarb juice per lb. of rhubarb.
2 cups rhubarb to 1 gallon of water or juice for a mix. To get the most of your rhubarb for juice, cut it into 1" chunks, freeze, thaw out overnight in bag and place over sieve or colander. Squeeze out the juice and use the pulp for your favorite rhubarb dessert, jam or sauce.

"Over 64 varieties of rhubarb are currently being studied at the Arctic and SubArctic Plant Genetic Resources Unit in Palmer, Alaska, as a research project funded by the U.S. Department of Agriculture’s Agricultural Research Service. It 5 is estimated that over 30 varieties are being grown privately in the Mat-Su Valley alone. The Locavore Network, an online source for locally grown produce, lists133 different produce growers in the state of Alaska, 22 of which are shown to grow rhubarb. It is one of the first Alaskan products that can be harvested in the spring, often in early to mid-May, and the plants continue to produce until the first frost. Rhubarb is easy to grow, and has been likened to a weed in its resilience.

For years, Alaskan farmers sold rhubarb at local markets and had excess at the end of each day. However, over the past few years, farmers have been selling out each time they bring rhubarb to market, indicating an upward trend in consumer receptiveness. At market, rhubarb sells best when firm and crisp, often with a deep red color running the length of the stalk. With its fibrous consistency, rhubarb does not lend itself well to the fast food/microwave society of the late 90s and early 2000s. But society is changing and locally grown food is moving away from the niche item it once was, especially on restaurant menus. Trendy “local food” movements have opened new markets for locally grown products, and Anchorage has answered the call with farm-to-consumer services, farm-to-restaurant services and you-pick farms.

National Overview

Over half of the nation’s rhubarb crops are currently grown in Washington State, but even that is minimal at less than 900 acres total. Of the 2.6 million pounds of domestic rhubarb shipped each year, Washington growers freeze 1.5 million pounds of it. In many areas of the nation, it is difficult to obtain rhubarb at retail outlets. Its popularity is trumped nationally by okra, turnip greens and escarole.

In Alaska, as with the rest of the U.S., our trend toward health and fitness can be seen as an advantage for rhubarb if marketed properly. In studies that compare rhubarb to cranberries, rhubarb offers far more potassium and folate, as well as significantly higher levels of lutein, zeaxanthin, vitamin A, calcium, vitamin K, beta-carotene and magnesium. Rhubarb is also a good source of dietary fiber and vitamin C. It is low in fat and has been shown to have cholesterol-lowering effects. Most recent findings place rhubarb in the anti cancer food group as it contains ample amounts of polyphenols: powerful antioxidants known for stopping and preventing the growth of cancer cells."

Found a new cookbook entitled "Every Which Way with Rhubarb" recipes & illustrations by Amanda Brannon. Very cool. I got my copy at Gullivar's in Fairbanks but my daughter also picked one up for me in Eagle River. 165 pages of recipes and "the low-down on rhubarb". Amanda lives in Palmer and is a nationally published, award-winning graphic designer and illustrator. A portion of the author's proceeds from this book goes to feeding children in need. Opening my Mother Earth News April/May 2011 edition I found an article (pages 28 & 29) , "Strawberries are NOT Rhubarb's Only Friend" by Tabitha Alterman. Alterman states that ..."because you can find hundreds of those recipes free online (including at www.MotherEarthNews.com where you can post your own recipes, too), I've decided to explore possibilities: as an unusual pickle, a tangy salad dressing and a wonderfully unique dessert topping. Bought a great new baking cookbook, the SoNo Baking Company Cookbook by John Barricelli.

In it I paged through to see if there were any rhubarb recipes. Yep. 2 yummy looking ones: Rhubarb Cherry Cobbler, page 139 and Rhubarb Strawberry Crisp, page 144. I'm going to try the crisp today and mix it up with some frozen wild berries. The cookbook has luscious photos and very good recipes.
I'm happy with my purchase.

John Barricelli is a third generation baker who graduated from the Culinary Institute of America and worked at River Cafe, Le Bernadin and the Four Seasons Restaurant. He then owned and ran Cousin John's Cafe and Bakery in Brooklyn for 10 years. (I feel a road trip coming on).

The teleconference hearing for HB 191 went quite well. Over a dozen people from across the state testified in a very positive response to HB191. Thank you to the legislatures who co-sponsored the bill and the committee members for hearing us. DNR took no position for or against this bill which I thought was hopeful. Again, we have in our state constitution that there was a Department of Agriculture, at the cabinet level, this was changed (in the 1960's) after statehood when it was put under DNR prior to ANSCA and the push to put the pipeline through. That is my understanding. It is time to put it back at the cabinet level before we sit as a state with no ag land or production. ARLF is in trouble, see the latest Alaska Business Monthly magazine for the article about that.

As you mentioned, this past July, the Mat-Su Governor's picnic featured all Alaska grown products. The beverage served at this even was rhubarb lemonade. It was both delicious and extremely popular.

The December 9, 2010 Western Producer featured an article by William DeKay of Saskatoon Newsroom about a Living Sky Winery Set.

"Sue Echlin and Vance Lester are passionate about wine. The co-proprietors of Living Sky Winery spend hours sampling the wines of other producers to further their own skills. The work is paying off for the husband and wife team, who recently won bronze at the Canadian Win Awards for their Juliett Cherry port dessert fruit wine."

Featured in the cover story photo are rhubarb and strawberry rhubarb wine.

I'm not sure which wine won the awards but I certainly hope that the rhubarb concoction was in the running. Good luck rhubarb business operators in our neighboring country of Canada!

Rhubarb, the reindeer lady, had a shiny bright red nose. She never thought that others, noticed her crooked glow. All of the other reindeer used to laugh and call her names. They never thought that Rhubarb, was going to be called to fame. Then one ice foggy day, Santa came to say. "Rhubarb with your nose so bright. Won't you break up the reindeer fight." She pranced over to the fight, drank her famous rhubarb juice. Gave one shove to Rudolph and got the tangled sleigh line loose.

So that's "the other side of the story".

Rhubarb as a filler. I have been trying to extend my berries and find that rhubarb is an excellent filler for doing this. I used 4 cups of frozen chopped rhubarb, added my 2 cups of berries (could be blue, rasp, straw, cran) and added sugar, a dash of lemon, and thickener. This makes the best pies, crumbles, sauces, and more.

Fresh from the Garden Cookbook by Ann Lovejoy is a real treat to read. She is the author of more than twenty books, and her cooking and gardening columns appear regularly in the Seattle Post-Intelligencer. She lives on Bainbridge Island, Washington. Page 96 has a section on rhubarb. "Sow seed or set out plants of cultinary rhubarbs in late winter (under cover) or early spring." Surely, late winter does not mean for us Alaskans. I continue. "Well-drained soil amended with ample compost helps young rhubarb plants size up quickly." She then adds the importance of compost and watering. Again, remember also to wait at least one year or two before harvesting from that same plant. "When you harvest, pull the stems rather than cutting them to avoid root rots. Always remove less than you leave, even on mature plants, to encourage regrowth." She also includes a couple of pages for recipes for Rhubarb and Blood Orange Chutney and Rhubarb Brown Betty.

The photographs by Robin Bachtler Cushman and recipes inspired by Kitchen Gardens just enhances this wonderful cookbook. It really is a "must have" and a wonderful addition to your cookbook shelf and/or a present for someone you love who has a garden.

PS. Don't forget to do also what Charlie Knight recommended each fall. Add 2" of good soil/compost to your rhubarb plant until there is about 8" of soil covering it (4 years should you have no erosion). This assists in a good root base.

Alaska was well represented at the national FFA convention Oct. 20-23 in Indianapolis. The theme this year was "infinite potential."
Nearly 55,000 FFA members and guests from across the country attended, with nineteen being from Alaska chapters.

Thank goodness there are youth who have a love of agriculture and I'm sure there are alot more out there with a love of Alaska food, fiber and renewable fuel.

While waiting for the banquet Friday night at the Alpine Lodge in Fairbanks during the Alaska Farm Bureau Conference, we got alittle inventive. After all, Alpine Lodge's slogan is "Come and experience the spirit of Alaska." That's just what we did. We had rhubarb juice for the 100 conference participants to taste as a lemonrhu drink. It went over well, so we had a bit of a wait that Friday night between when the day's speakers adjourned and when the banquet started. That's when we headed to "The Finish Line" as the chowhall and beerhall is called. We brought the raw rhubarb juice in and decided to try some concoctions. Our official tester was Bernie Karl owner of Chena Hot Springs Resort and K & K Recycling. He gave each taste of the concoctions either a thumbs up or thumbs down. We all had alittle try at the sampling and decided that yep, rhutini's and rhubargarita's are going to make it to the bar circuit just as soon as we producers can get more rhubarb available. Thanks Bernie for sacrificing your taste buds.

I am at the Alaska Farm Bureau conference here in Fairbanks. It has been 20 years since they have held the conference in the interior and I must say, they have about 100 people attending. This is a good thing. Today we go over resolutions.

Director Havemeistier spoke and said that the Governor has released the Commissioner of DNR and Marty Rutherford, Havemeister's resignation was also requested however, the stipulation was that they could resubmit should they choose to stay on, she did this.

Former Fairbanks Representative Jay Ramras received the Legislature of the Year award which Bill Stolz from the Mat-Valley accepted for him. He was in CA. Papa from Papa's Greenhouse received the Producer's Award. The Alaska Diversified Livestock Association gave Bryce Wrigley and ADLA Ag Appreciation Award.

It has been a good conference. Newly elected Representative Alan Dick was here and spoke up in support of agriculture.

We have had nice lunches and a banquet which I think was Alaska grown as much as possible. Bruce Bush from Bushes' Bunches and I gave a rhubarb talk.

   * The two things that I know about that have happened recently are the
formation of a Stakeholders group and the development of the
construction documents by Wolf architecture.
   * The Stakeholders Groups was the outcome of an information session
held about 2 months ago. Mat-Su was receiving inquiries from agencies and
potential users who did not have much information about the project, so
they did an information session. About a dozen people signed up
to be in a group that would follow the progress and provide input to the
architects as they did the final drawings.
   * The Stakeholder Group will meet again around December 2nd.
   * Representative Don Young was in town and asked for an update on the
borough's projects. They presented the APPDC, which he is in favor of
and a lover of the rhubarb juice in addition to other borough

Rhubarb Preservation projects is in response to the lack of effort nationwide to maintain the genetic basis of this minor but important crop. Over 2,000 years ago it was found in Western and North-western provinces of China and in the adjoining Tibetan territory, and was origionally cultivated for its medicinal qualities. Since the 18th century, rhubarb was grown for eating. Rhubarb is often commonly mistaken to be a fruit but rhubarb is actually in the vegetable family. Rhubarb is rich in vitamin C and dietary fiber and initial tests have found that it can lower cholesteral.

Although SSS Director Lise Abazs laughs everytime I talk about the Rhubarb Preservation Project, nothing in God's Creation is too small to be cared for. Rhubarb is well suited for our site, making it an ideal location for its preservation for current and future generations. I bet you never knew how many varieties of Rhubarb are out there... We are just starting this collection, so if you have found one of these varieties, please let us know!

The Rhubarb Preservation Project is in accordance with Shalom Seed Sanctuary's mission; to research and educate about sustainable agriculture, specifically the preservation of open pollinated plant varieties and domestic animal breeds neglected by modern agriculture, so that their characteristics and genetic information will be available for future generations.

Rhubarb Varieties All the varieties listed as (Palmer Alaska), have been found and we are working to get samples of each variety in their collection. Any variety without (Palmer Alaska) next to it, still needs to be found and brought into the collection. I'm on a mission. Upon my week travels back East, I found no rhubarb. Although, I found plenty of pumpkins. These next 3 seasons, I am on a mission to visit Hardwick, Vermont to tour their agriculture community, find rhubarb "outside" in the "lower '48" in places like WA, WI and VT. The clock is ticking. I want to find out where they grow it, the varieties, how they process it, where they use it and how they store it.

Next mission will be traveling to the UK to tour their rhubarb production. That will have to wait until 2012.

Pan Roasted Halibut with Rhubarb-Ginger Vinaigrette

Makes 4 servings

Vinaigrette

1/2 cup chopped fresh rhubarb
1/4 cup sugar
1/4 cup white wine or raspberry vinegar
2 teaspoons minced fresh ginger
1 clove garlic, minced
1 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/4 – 1/2 teaspoon sambal oelek
2 tablespoons coarsely chopped fresh cilantro
1/3 cup vegetable or light olive oil

Had a great time, even with the rains, at the Spenard Farmers' Market. I made and served rhubarb juice with the University of Alaska Cooperative Extension Booth. Lots of veggies, great vendors, friends (Nancy and Paul Bentley) who came to give me support along with daughter, Leslie, and her children who "tailgate picnic'd" while waiting for grandma. I met some great folks and got reacquainted with my neighbor's sister, Bonnie, who was selling beaded jewelry, fiberart scarves and guess what? rhubarb peach jam which my daughter and I said would be FABULOUS! Thank you to the CES volunteers and employees who helped me out. Your were GrEaT!

"Ruby,

About 15 years ago, my wife was trying to grow some plants under the birch trees in our back yard and the tree roots were so competitive that nothing would grow. I got this great idea that I would cut the tops out of some 55-gallon barrels and punch some holes in the bottoms and dig them into the flower bed and plant inside the barrels, thus excluding the tree roots. A few days and a few blisters later, I had six barrels buried in the backyard. I filled the barrels over half full of manure and then added a little soil on top, then planted rhubarb in three of the barrels and peonies in the other three. The rhubarb did great. The peonies didn’t die, but they never produced any flowers either. Last spring, I realized that the barrels were full of tree roots that had found their way up through the holes in the bottoms, so I dug up the barrels and tossed them. The interesting part was observing the plants as I dug them up.

The main crowns of the rhubarb plants were buried at least a foot deep in the barrels and the peony crowns were at least five inches deep. Evidently, the manure had rotted and settled over the years, and as I had rototilled around the barrels each year extra soil had sloughed over the sides and had buried the plants pretty deep. Since peony plants aren’t supposed to be planted more than one to one and a half inches deep, that explains why I didn’t get any flowers. The rhubarb was a different story.

I dug up the first barrel and dumped it out and finally extracted the rhubarb roots and washed them off with a hose (see attached photo). I really liked the rhubarb, so I decided to split up the roots and plant them out on my farm. As I started picking out the dead material from between the eyes or buds, I realized that the main crown was way down at the bottom of the ball and that each eye had grown up on a tall stalk (like a carrot) with a bud on top. I could snap off each stalk and it was just the right length to fit in a 2-gallon pot. I didn’t need very many plants, but it became a game. When I ran out of eyes to snap off of the main crown, I had 76 pots lined up along my driveway. I left the remaining root ball (about the size of a basketball) in the wheelbarrow in my front yard (I never pick up my tools after working). About two weeks later, it had been raining for about a week and when I came home from work I wondered “What is all that green stuff growing out there in that wheelbarrow”? I went out and found that the bottom root ball from that rhubarb plant was covered with little eyes and leaves popping out all over. I went inside and got a sharp hunting knife and decided that if I could get 24 more plants from that root ball, I would have 100 plants separated from one mother plant. Before I got done, I was putting pieces with as many as six eyes into each pot and still got my 100 pots. One died, so I only ended up with 99 plants. When I dug up my other plants, I wasn’t as meticulous with my plant propagation.

What did I learn? I believe that if there is ever a demand for rhubarb plants in Alaska, I will add a couple of inches of soil around my plants each year until they are about 8-inches deep. Those eyes growing up on carrot-like stems sure are easy to propagate.

Dramm Corporation and a large Alaskan Fish Processor have joined together to use fish heads, entrails, and other fish by products to produce Drammatic fish fertilizer for organic and conventional crops in Cordova, Alaska. During the summer of 2009, they did a trial run to produce the fertilizer at the new plant, built for the production of the fish fertilizer and fish oil in Cordova. The 2010 processing year will, hopefully, show a full production.

The organic fish fertilizer is a liquid fertilizer of a consistency of chocolate milk, designed to be sprayed on the cold, wet fields. It is possible to seed and fertilize at the same time. You can also fertilize after germination. The normal application is 3 – 5 gallons per acre. This fertilizer is different than the normal nitrogen/urea that is normally used. It also contains high levels of Calcium and Phosphorus for an organic fertilizer. This product is produced from fish and is not a petrochemical. Therefore more of the nitrogen is available for use by the plants, and is not washed off with rain thus not entering the rivers and lakes. Drammatic fish fertilizer does not only feed plants but it also provides nutrients for the beneficial biology in the soil and on the leaf surfaces.

As of this writing, the fertilizer will be available in 55-gallon drums or totes. Since the Drammatic fish fertilizer is produced in the summer, it will be held until the following spring. Kurt Dramm of Dramm Corporation said that the fish fertilizer should not freeze in extreme sub-zero temperatures. It will be possible to store the product at the Cordova plant until needed.

Dramm Corporation, whose main office is in Wisconsin, has been making the fertilizer on the East Coast for 40 years. This is the first time that they have expanded to the West Coast. For more information on this product, please refer to Dramm’s web site: www.FishFertilizer.com

In interior Alaska, we can get one more pull from the rhubarb plants. Today, the Sullivan Roadhouse served rhubarb/strawberry sauce over the homemade vanilla ice cream at their Soup for Sullivan fund raiser. Other U-Picks, B & B's and farms finish their harvests and begin plans for expanding the rhubarb crops in the spring.

There is no way that I can do 365 recipes I decided, I don't even have enough rhubarb. But with this idea, I have begun to create some rhubarb dishes/drinks for tasting and sharing. Here is a recipe that I have adapted from the book, "The Joy of Rhubarb", Rhubarb-Plum Chutney.

Alaskan adapted chutney because we often cannot get fresh plums or other fruits in Alaska.

1 tablespoon mustard seed
2 cups of rhubarb pieces (cut into 1/2" chunks)
5 prunes (chopped the same size as rhubarb)
1/4 cup raisins
1/4 cup sugar
1/3 cup vinegar
1 tablespoon ginger

Toast mustard seeds in a nonreactive saucepan over low heat until they pop. Remove pan from heat. Add remaining ingredients. Bring to simmer, and cook until rhubarb and plus are tender, about 8 minutes. Remove from heat; let cool, Spoon chutney into a clean jar; cover and store in refrigerator for no longer than 2 weeks.

Call Crystal at 803-3660 if you have rhubarb you'd like to sell. She has made 2 runs down the highway to Palmer to deliver. The rhubarb is then cut, cleaned and boxed for retail to Anchorage distributors.

The first ever Deltana Fair Rhubarb Throwdown was a huge success. Over a dozen entries competed for Grand Champion, 1st, 2nd and 3rd place. Chef Keith Lewis tasted his way and commented that "there were no losers here". He was very impressed with the quality of the dishes. Grand Champion went to Brooke Whipple with her rhubarb tartlets and 1st place was rhubarb muffins by Roberta Smith. 2nd place was a rhubarb leather from Bonnie Meritt that Chef Keith thought was a prospect for a business venture and 3rd place was a festive rhubarb roll by Dawn Grossman. All entries were wonderful and delicious. We had rhubarb crunch, rhubarb pie, cinnamon rhubarb muffins, rhubarb strawberry thumb print cookies, rhubarb pudding cake and rhubarb custard squares. Watch out next year! I think we've started something.

As we turned the tables on Chef Keith, he went against the local challenger, Leslie Hollembaek Bobo, with his Alaskan Rhubarb Coffee Cake and her Rhubarb Upside Down Cake. She won the challenge and a good time was had by all.

Q: Can the public visit the Experiment Farm in Palmer to view the different varieties grown there?
A: The rhubarb collection is part of the Arctic and Sub-arctic Plant Genetic Resources Unit. They have more than 300 rhubarb plants encompassing 64 varieties growing there from all over the United States and Europe this year. It is maintained by the U. S. Department of Agriculture's Agricultural Research Service. This is a research project to try to save our food plants for posterity. The public can't roam through the fields, so someone would have to escort visitors.
